Thin Spaghetti
Medium Shrimp - cleaned & no shell
Calamari - cut into 1/2" rings
Plum Tomatoes - (crushed by hand) no salt added
Tomato Paste - no salt added
Onion - chopped
Garlic - chopped
Red Bell Pepper - sliced into 1/2" strips
Crimini Mushrooms - quartered
No Salt Seasoning - (Costco)
Old Bay Seasoning
Emeril's Essence (BAM)
Parmigiano Reggiano Cheese - grated
Black Pepper
Basil - dried
Oregano - dried
Parsley - dried
Extra Virgin Olive Oil - (for sauce)
Extra Virgin Olive Oil - (for Calamair & Shrimp)
Red Pepper Flakes
Red Wine
Water

non stick olive oil cooking spray
In a large pot add 1 Tbsp olive oil and red pepper then heat on medium low, add onion and saute till translucent, about 6 minutes, add garlic and cook for 2 minutes. Add 1 Tbsp olive oil & bell peppers and saute for 4 minutes till tender. Add mushrooms and 1/4 cup of red wine, 1 tsp of no salt seasoning 1/4 tsp of black pepper and cook for 3 minutes.

Add tomato paste to vegetables and heat through for 1 minute then add crushed plum tomatoes simmer for 15 minutes then add remaining no salt seasoning, basil, oregano and parsley,  On a low heat simmer for 30 minutes then add wine and sugar and continue to simmer for 30 minutes more.

In a separate bowl place shrimp, 1 teaspoon extra virgin olive oil and 1/2 tsp of Old Bay seasoning, mix and set aside.
In a separate bowl place Calamari, 1 teaspoon extra virgin olive oil and 1/2 tsp of Emeril's Essence (BAM)  seasoning, mix and set aside.

In a large pot bring 8 quarts of water to a boil then add thin spaghetti and cook uncovered for 4 to 6 minutes till al-dente.
(Note: follow the directions on the spaghetti package for actual cooking time as they will vary depending on the brand of pasta...)

In a skillet spray with olive oil, heat to a medium heat then cook shrimp for 1 minute per side. Spray the pan again and cook the calamari for 1 minute then place shrimp and calamari into tomato sauce and allow to simmer for 15 minutes more.( Do not cook or add the shrimp or calamari till the last 15 minutes of total cooing time of the sauce. You do not want to over cook the seafood portion of your dish)

Drain the spaghetti of water and add to tomato sauce. Add a sprinkle of grated Parmigiano Reggiano Cheese and your ready to serve...

Papa's Cooking Tip:    When adding dried spices such as basil, oregano and parsley they need to be crushed by your hands. Place the spice into the palm of your hand. Rub them together and crush the spices releasing the essential oils.
