Ingredients:
Crimini Mushrooms - sliced
Parsley - chopped
Garlic - chopped
Vegetable Stock - low sodium
Onion - sliced thin
Water
Cornmeal or Polenta
Mozzarella Cheese - grated
Parmigiano Reggiano Cheese - grated
Extra Virgin Olive Oil
Red Pepper Flakes
Mrs.Dash
Oregano
Basil
Sea Salt
Black Pepper
In a large Pot, bring 2 1/2 cups of water to a boil. While the water is boiling mix corn meal with 1 cup of cold water and set aside. Once the water is boiling pour the corn meal into the water slowly stirring at the same time. Stir the mix constantly till cornmeal thickens, about 6 to 8 minutes. When done add Mozzarella cheese, remainder of salt, pepper and Mrs.Dash stirring to combine.
Cooking Tip - The longer you stir the polenta the smoother and creamier it will become.
It can take up to 30 minutes for a rich smooth polenta for a true Italian dish to be prepared.
Place oil into a large cold saute pan with red pepper flakes & 1/2 the garlic. Warm up the pan on low heat for 3 minutes. remove the garlic from heat and reserve for later. ( If you leave the garlic in the pan it will burn and give a bitter taste to your dish.)
Raise the heat to medium and saute the onions till tender (translucent). Add the reserved garlic and cook for 2 minutes more then stir in 1/2 the parsley to the mix.
Add the mushrooms and saute for 5 minutes till tender. Add vegetable stock to pan adding oregano, basil 1 tsp of Mrs.Dash, 1/2 of sea salt & pepper and simmer on low for 10 minutes.
Serve Polenta with mushrooms on top and sprinkle with Parmigiano Reggiano Cheese.
