Turkey and Potatoes together are a prefect way to use those leftovers from a nice roasted turkey dinner or just create a quick and easy meal from scratch. With the flavor already built into a nice roasted turkey, just add a few vegetables some mashed potatoes and Walla, Magic is born with a wonderful Home Cooked Meal. Turkey is great in so many ways. Put it on top of mashed potatoes, rice or noodles and of course don’t forget it’s even great on top of polenta. No matter what your preference this is a meal you can enjoy time and time again… The average Turkey dinner starts out at a minimum of 600 mg’s of sodium. However most seem to climb well over 1,000 mg’s and much higher. It’s a Turkey Dinner, I guess they forgot.

Turkey Over Taters  -  Serving's: 4
Per Serving: - Calories 488; Sodium 163 mg; 
Fat 19g; Protein 33 g; Carbohydrate 48g;

Ingredients:
Prepare Mama Carol’s Poultry Rub and set aside.                         
Prepare Mama Carol’s Grill’n Rub and set aside. 
Cut roasted turkey into bite size pieces.










Chop Onion, Mince Garlic, Peel Carrots then cut into ½” rounds.
Cut Celery into ½” pieces, cut Zucchini into ½” pieces.
Peel and Rinse potatoes then cut into quarters.

Let's Get Cook'n

Place a large pot on the stove. Place cut potatoes into pot and
pour enough water to cover the potatoes. Place lid on pot then
heat and bring to a boil. When the water is boiling lower the heat 
to a simmer. Cook for 15  to 20 minutes until fork tender.
Using a strainer, drain the potatoes and place back into pot.
Using a potato masher or ricer, Mash potatoes. Add, 2 Tbsp Butter 
until blendedthen add, 2/3 cup almond milk / 2% milk and blend. 
Add No-salt seasoning andmix through till creamy. Place lid back 
on pot and set aside till needed.

Place a large skillet on stove. Place Extra Virgin Olive Oil in skillet & add red pepper flakes.Heat skillet to medium then add Onion and cook for 5 minutes till translucent.Add Garlic and 1 tsp grill’n rub then cook for 1 minute more. Add Carrot and ½ tsp grill’n rub - - cook for 4 minutes. Celery and ½ tsp grill’n rub– cook for 3 minutes. Zucchini, ¼ tsp ground black pepper and ½ tsp grill’n rub. – cook for 4 minutes.

Place roasted turkey into skillet. Add 1 tsp poultry rub and mix. Add 1 cup turkey / chicken broth and mix through then bring to 
a boil. Add 2 Tbsp arrowroot 

Mix 4 tbsp of cold broth or water with 2 tbsp arrowroot 
       in a separate cup to blend before adding it to your skillet

Mix into sauce then bring back to a boil. Lower heat
Simmer on medium low for 10 minutes.

Place mashed potatoes on a plate and turkey & veggies on top.

2    - cupsTurkey or Chicken Broth – low sodium
1    - largeOnion - chopped

½   - tsp  Ground Black Pepper
2    - Tbsp       Arrowroot or Cornstarch
2/3 - cup Almond Milk or (2%) Milk
2    - Tbsp      Unsalted Butter

Mama Carol’s Poultry Rub
¼ cup brown sugar  -   ½ Tbsp dry mustard
1/8 tsp cayenne pepper   -  1/16  tsp sea salt
½ tsp – paprika, onion powder, garlic powder
¼ tsp – ground black pepper, sage, poultry seasoning
Mix together in a bowl and sprinkle on your Poultry. 
Allow to set for30 minutes or more.

Papa’s Cooking Tip
Roasting Turkey.  If you don’t have leftovers. 
You can roast thighs, legs or breast in the oven at 350 degrees. Place the turkey in a baking pan. Spray the pieces with olive oil spray and sprinkle with Mama’s Poultry seasoning and a little extra ground black pepper. Place in the oven and cook for 35 to 40 minutes. Let it cool for 15 minutes then take the meat off the bones and cut into bite size pieces…
Mama’s Cooking Tip
Arrowroot or Cornstarch must be mixed with a cold liquid. Hot liquids will make it very lumpy and it will not blend well.
It is important to bring the liquid to a boil once added to your skillet to allow the mixture to fully thicken.

Mama Carol’s Grill’n Rub
1 Teaspoon each of:
Thyme, Cayenne Pepper, Black Pepper, Cumin,
Smoked Paprika, Granulated Garlic, Granulated Onion, Chili Powder, Brown Sugar, Dry Mustard, No-Salt Seasoning (Kirkland)

Mix all ingredients in a bowl to blend. You can 
also use a coffee / spice grinder to make a better balanced rub.  Sprinkle on all of your favorite Grill’n recipes… and store the rest for next time.
