Chicken
Apricot Preserves, Mama's Grill'n Rub and a little Marsala Wine. When they come together The Wow factor is amazing. Apricots are not only colorful and tasty but most importantly they are heart healthy. Containing beta-carotene and lycopene they are a wonderful source to help with arteriosclerosis and several cardiovascular diseases. Ok enough with the technical stuff. Bottom line their good for you and put together in a glaze with chicken your taste buds will say Wow... By the way this dish is so low in sodium that Mama C just put a big smile on your face. So enjoy and be heart smart...

A Heart Healthy Life Style
Prepare Mama Carol’s Grill'n Rub.
Sprinkle over chicken and allow to sit for 30 minutes.

To Make The Glaze
Heat apricot preserves, dijon mustard, crushed dried thyme, minced
garlic and ground pepper, together in a small sauce pan over low heat.
Simmer until melted and heated thru. Set aside.

Heat a skillet  to medium with grape seed oil.
Place chicken in heated oil and brown lightly, about 3 minutes per side. 
Remove chicken to a plate and set aside.

In the same skillet, add Marsala wine and reduce to thicken slightly.
About 3 minutes.  Add 2 tablespoons of prepared glaze and blend in.
Place browned chicken back into pan with sauce.  Spread glaze on top
of chicken then cover with skillet lid. 
Cook on low heat until done. About 20 minutes.

Chicken will be done at 175 degrees on a meat thermometer.

Mama Carol’s Grill'n Rub

1 tsp: Thyme, Cayenne Pepper, Black Pepper
1 Tbsp:  Cumin, Smoked Paprika,
Granulated Garlic, Granulated Onion, Chili Powder, Brown Sugar, Dry Mustard,
No-Salt Seasoning (Kirkland)

In a small bowl, mix all ingredients till well blended.
You can also use a coffee / spice grinder to make a better balanced rub. 
Sprinkle onto your fix'ns.
For best results let stand for a minimum of 1/2 hour or up to over night in the refrigerator.
